Where it comes from
This label originates from the Boursault area, in the heart of the renowned Champagne region, under the careful guidance of Aurore and Florian Laval. The name chosen for the cuvée, which in Latin means “once”, evokes the emotion of the first encounter with the vineyard and the harvest. The entire agricultural process follows a strict organic and sustainable approach, aimed at preserving the natural ecosystem and enhancing the characteristics of the soil. This agronomic attention translates into a pronounced chalky minerality, which gives a clear vertical imprint to the flavour profile. Thanks to these characteristics, the Champagne acquires an ageing potential estimated between five and ten years, allowing the aromatic profile to develop over time.
How it is produced
The vinification of this rosé involves fermenting the must partly in barrels and partly in tanks, a technical measure essential for balancing the fruit’s expressiveness with the wine’s structure. The sugar dosage is deliberately kept low to define the Extra Brut character, resulting in a dry, clear and balanced palate. Made using the Traditional Method and served at the ideal temperature between 6 and 8 °C, it expresses its maximum fragrance at the table. Its balanced acidity and persistence make it perfect for pairing with fish carpaccio and marinated salmon, and it also proves a refined match with soft cheeses and delicately spiced dishes.
