Vigna del Sorbo by Fontodi is an organic red wine that represents the excellence of Chianti Classico Gran Selezione. Crafted from a skilful blend of Sangiovese and Cabernet Sauvignon, it stands out for its dry, structured and extremely elegant profile. On the nose, it reveals a refined bouquet where notes of wild berries intertwine with delicate balsamic nuances. The palate is warm and enveloping, supported by noble and sweet tannins, already harmoniously evolved. The finish is clean and marked by a pleasant savoury note that prolongs its persistence, making it the ideal companion for game, robust risottos and grilled meats.
Where it comes from
This wine is produced in Tuscany, in the heart of the Chianti Classico area, specifically in the renowned Vigna del Sorbo in Panzano. The vineyards benefit from a south-west exposure, a crucial factor in ensuring optimal ripening of the grapes and the development of a solid tannic structure. The vines, around forty years old, are cultivated using the Guyot training system. The planting density is designed to naturally limit yields, thus ensuring extraordinary fruit concentration and great aromatic precision.
How it is produced
Fontodi's production philosophy favours a low-intervention approach, starting with a rigorous manual harvest. The process continues with spontaneous fermentation carried out by indigenous yeasts in temperature-controlled stainless steel tanks. Maceration on the skins lasts for over three weeks, allowing for a balanced extraction of colour and phenolic components. After malolactic fermentation, the wine matures for twenty-four months in French oak barrels from Tronçais and Allier. The process concludes with a prolonged bottle ageing, which consolidates its structure and overall harmony.

Fontodi is a certified organic farm and covers 170 hectares, of which more than 80 are planted with vines. The principles of naturalness and sustainability inspire the agriculture that is practised: not only are no synthetic chemical products used, but an attempt is made to make the most of the company's internal resources by reducing external inputs. For example, the vineyards are fertilised using compost produced by combining pruning residues and manure from the farm's own Chianina breeding.
