Wine making | From a selection of Sangiovese grapes harvested in mid-October, the carefully destemmed grapes are vinified in modern stainless steel tanks, with maceration on the skins for an average duration of 25 days at an average temperature of around 26°C. |
Aging | Malolactic fermentation is carried out in French oak barriques where the wine remains for about 30 months. After careful selection of the best barriques, it is further refined for 6 months in the bottle at the end of the ageing period. |
