Wine making | The fermentation takes place in stainless steel at 16 °C for 40 days and then is cooled to prevent malolactic fermentation. The sugar residues are of 5-6 grams per liter, since the low temperature fermenting yeasts are blocked at this point; the slight residue helps the aromatic expression of Riesling. |
Aging | Remains on the lees for 6 months, without batonnages and bottled in May. |
