Description
Alta Langa DOCG Brut Classic Method Sparkling Wine, 12.5% ABV, produced by Enrico Serafino. Blend: 80% Pinot Noir, 20% Chardonnay. 2020 vintage. An Alta Langa born in the heart of Piedmont, in Canale d’Alba. The vineyards are located at an average altitude of over 400 meters in the authorized Alta Langa DOCG area. The grapes are sorted on a vibrating table and cooled before being softly pressed whole in an inert environment. Fermentation takes place exclusively in stainless steel at a controlled temperature. The resulting bases remain in contact with their own yeasts and undergo periodic bâtonnage until tirage for the secondary fermentation. Aged for 42 months. Rich aroma with hints of honey, yellow flowers, and white-fleshed fruit, interspersed with yeast and bread crust. Fine and persistent perlage. Bright straw yellow. Ample, elegant, fresh acidity, savoury and at the same time rich and complex with a long, satisfying mineral finish.

Founded by Serafino Enrico, an entrepreneur and landowner, the winery soon became one of the most important in Piedmont and among the first to spread the region's classic wines throughout Italy and abroad. In addition to the classic Piedmontese wines of the area, first and foremost Roero, Arneis and Barbera, the company produces great Barolo and Barbaresco from grapes from the nearby Langhe, noble and elegant wines in which the Nebbiolo grape variety expresses its characteristics at its best. But Enrico Serafino's pride and joy is the selection signed 'Cantina Maestra', in which the red wines Pasiunà and Parduné stand out, the highest expression of excellence of the Roero territory, and the Metodo Classico Alta Langa DOC sparkling wines. | Climate | The vineyards are located at an average altitude of over 400 metres in the area authorised for Alta Langa docg. |
| Harvest | The grapes are sorted on a vibrating table and cooled before being, still whole, gently pressed in an inert environment. |
| Wine making | Fermentation is exclusively in stainless steel at a controlled temperature. The bases thus obtained remain in contact with their yeasts and undergo periodic bâtonnage until they are drawn for frothing. |
| Aging | This takes place in the historic cellars in the absence of light and at a controlled temperature for the time required by the vintage and in any case an average of 42 months. Dégorgement à la glace ends with the dosage of Liqueur d'expedition, which for this brut is 6-7 g/l residual sugar. In order to preserve the terroir-to-wine ratio, no wine distillate such as Cognac or Brandy is ever used in the Liqueur d'expedition. |
