Description
What kind of wine it is
Duemani Cabernet Franc is a still biodynamic red wine that reflects the authentic character of the Tuscan Coast. Made exclusively from Cabernet Franc grapes, it appears in the glass with a bright ruby hue. The nose opens with wild berries, blackberry, dark tobacco, vegetal notes and Mediterranean scrub. On the palate, the structure is supported by a silky tannin and a pleasant softness, balanced by a lively fresh-savoury backbone that ensures long persistence. It is ideal with grilled red meats, game and mature cheeses.
Where it comes from
The Duemani vineyards are located in Ortacavoli, Riparbella, nestled on hills reaching 250 metres above sea level. The constant influence of sea breezes gives the grapes a marked freshness, a key element of the wine's organoleptic profile. The clay and saline soils with a calcareous skeleton favour the precision of the fruit. The vines are trained using the Guyot system with high planting density, strictly limiting yields per plant. This agronomic management ensures optimal aromatic concentration, allowing the bunches to encapsulate the pedoclimatic essence of the area.
How it is produced
Vinification begins with meticulous manual harvesting, followed by gentle destemming to preserve the integrity of the berries. Spontaneous fermentation, triggered by indigenous yeasts, takes place in truncated conical oak vats at controlled temperature. This is followed by a long maceration on the skins with brief pump-overs, aimed at extracting the noblest components. The process continues with careful ageing in French oak barrels, mostly new, which defines the olfactory complexity and shapes the taste texture. The cycle concludes without fining or filtration, safeguarding the wine's integrity.
