Description
Om de Fer Brut Blanc de Blancs is a Trento Doc classic method that stems from the desire of the Dorigati family to create a great sparkling wine starting from the high quality of the draught cuvèe; with the aim of combining the typical freshness of Trentino bubbles with the complexity and evolution typical of the classic method. For this purpose, 30 % of the grapes are harvested when they are more mature than the classic sparkling wine base, in order to bring volume and complexity. The use of old wood helps the Chardonnay to have an oxidative evolution before frothing. We also pay particular attention to using small percentages of Chardonnay from previous vintages in order to implement the olfactory complexity. This is OM DE FER Brut Blanc de Blancs: a classic method born to give joy and pleasure.

Story | The name derives from a local legend, which tells of a Basilisk that dwelt in Castel San Gottardo in Mezzocorona, terrorising the inhabitants of the Piana Rotaliana. A knight, Count Firmian, wearing iron armour (hence Om de Fer), killed the Basilisk, freeing the land from terror and destruction. We therefore wanted to celebrate this liberation and the return to life with this classic method. |
