What kind of wine it is

Sul Vulcano by Donnafugata is a still red wine that embodies the Etna Rosso style. Created from a blend of Nerello Mascalese and Nerello Cappuccio, it displays a lively, light ruby red colour. On the nose, it is clear, defined by notes of red fruits, violet, oriental spices and fresh balsamic hints. On the palate, it offers a juicy texture, led by silky tannins that balance the structure, finishing with a harmonious and persistent aftertaste. Maturation in French oak barrels enhances its aromatic depth while preserving the varietal freshness.

Where it comes from

This wine originates in eastern Sicily, on the northern slopes of Mount Etna, between Randazzo and Castiglione di Sicilia. It is an authentic example of mountain viticulture, characterised by terracing and dry-stone walls made from lava stone. The vines, situated over 700 metres above sea level, sink their roots into sandy volcanic soils formed from ancient lava flows, locally known as "sciare". These deep, mineral-rich soils impart distinctive traits to each micro-territory. The climate, with cool summers and significant temperature variations, ensures the ideal aromatic development of the grapes.

How it is produced

Production begins with meticulous manual harvesting into crates, followed by an initial selection in the vineyard. In the winery, the bunches are further sorted to remove any imperfect berries before destemming. Fermentation in stainless steel takes place at a controlled temperature, with maceration on the skins for about ten days. The process continues for over a year, alternating between resting in tanks and barrels, and is completed with a carefully calibrated maturation in bottle that harmonises the structural components before release.

Wine making Upon arrival at the winery, further selection of the grape bunches takes place on a vibrating table, followed by berry selection using a state-of-the-art destemmer, which selects only perfectly ripe berries, discarding green and overripe ones.
