What kind of wine it is

This Blanc de Blancs Extra Brut by Domaine Les Monts Fournois is the Champagne that precisely expresses the potential of Chardonnay. Crafted according to the strict rules of the Traditional Method, it appears in the glass with a bright straw yellow colour, enlivened by a fine and persistent perlage. On the nose, it opens with clear citrus notes that introduce a lively sip, distinctly savoury with a long and satisfying finish.

Where it comes from

The grapes come from plots classified as Premier Cru located in Vertus, in the heart of the Côte des Blancs. In this prime area, Chardonnay benefits from ideal environmental conditions that give the wine a pronounced aromatic definition and vibrant gustatory tension. The oenological guidance is entrusted to Juliette Alips, a vigneron whose rigorous training in Burgundy is reflected in meticulous vineyard management, delivering a faithful and authentic profile of the region of origin.

How it is produced

The production process involves a long ageing on the lees, an essential step to consolidate structural complexity while maintaining the dry and taut profile that characterises the Extra Brut dosage. This cellar ageing gives the wine remarkable ageing potential, estimated between ten and fifteen years. Served at a temperature between 6 and 8 °C, it is best enjoyed paired with seafood starters and shellfish. Its pronounced savouriness also makes it an ideal companion to enhance cheese selections.

History and Curiosities

This 2010 Vintage Extra Brut Champagne is the result of the talent of Juliette Alips, an expert oenologist leading Domaine Les Monts Fournois. A pure expression of Blanc de Blancs from Chardonnay grapes, this wine comes from the renowned terroirs of Vertus Premier Cru. Bottled in 2011 and disgorged in October 2023 after a very long and patient maturation, it represents an oenological rarity produced in only 18,200 bottles. The superb elegance of this cuvée has won over critics, earning the excellent score of 94 points from Vinous.

From this winery
Born in Champagne in a grower’s family, Juliette Alips rapidly found her passion. With the mentorship of her close cousins, Raphaël and Vincent Bérêche, she discovered and learned all the ins and outs of producing champagne, from farming, to vinification, tasting and blending.

Graduated from oenology school in Beaune in 2020, Juliette already has a few vintages under her belt with acclaimed producers like Louis Latour in Bourgogne, G.D. Vajra in Piedmont, and closer to home, Roederer Estate where she spent more than a year learning from this iconic maison.

Now, with the help of her two cousins, she is starting this new adventure with Domaine Les Monts Fournois. Located in the north part of the Montagne de Reims, in the sub-area called La Grande Montagne, the Premier Cru Les Monts Fournois will be the focus of the domaine. Until the first vintage of that wine releases in a couple of years, the Domaine is offering a very small selection of vintage Grand Cru Champagnes. Using the extensive and strong family grower relationships developed by her cousins, Juliette is able to source tiny quantities of superb champagne from iconic vineyards to craft these exceptional wines.

We are pleased to present this inaugural offering of 3 grands crus: a 2015 Côte Grand Cru from the Côtes des Blancs, a 2016 Côte from the Oger Grand Cru in the Côtes des Blancs and a few, highly coveted cases of 2012 Montagne Grand Cru from the Montagne de Reims area.
