Description
Type of wine
The Negroamaro Primitivo Casale Ciliani from producer D'Addario is a still red wine that combines famous Apulian grape varieties in a blend of great character. Recognised as an authentic expression of the Salento IGT (typical geographical indication), it stands out for a fruity and balsamic aromatic profile, enriched by elegant notes of cherry, morello cherry and violet. On the palate, it is full-bodied, structured and enveloping, thanks also to the malolactic fermentation and targeted ageing in wood. The sip concludes with a spicy carob finish, ideal for accompanying intense flavours, traditional Apulian cured meats and meat-based recipes.
Origin
This wine originates in the evocative territory of Salento, specifically in an area of Apulia between the provinces of Brindisi and Taranto. The Negroamaro and Primitivo vines are rooted in poor calcareous-clay soils, characterised by a low presence of rock fragments. These specific agronomic conditions, combined with a predominantly hot climate, favour an extremely concentrated aromatic yield. The particular nature of the soil encourages the plants to grow deep in search of nourishment, giving the fruit a distinct territorial mark that is reflected in the clear balsamic component noticeable during tasting.
How it is produced
The cellar process is based on careful vinification that includes malolactic fermentation, an essential technical step to give the wine greater smoothness. Subsequently, maturation proceeds with ageing in barrels made of medium-toasted French oak, where the wine rests for a period of between three and four months. This calibrated stay in wood allows for the enrichment of the organoleptic profile without overpowering the identity of the original fruit, integrating the floral nuances of the must with a delicate, persistent spiciness.
History and interesting facts
The D’Addario Negroamaro Primitivo Casale Ciliani 2025 expresses the authentic strength of Puglia, combining historic grapes grown on the limestone-clay soils of Salento. This wine embodies the prestige of a rural heritage rooted in the provinces of Brindisi and Taranto. The choice of the D’Addario winery to age this red in French oak barriques bestows it with a significant structure. An interesting detail is the depiction of a small red fox on the label.
