Description

With a DOCG designation, this Amarone della Valpolicella - produced by Cantina Domini Veneti Negrar - is a dry red Italian wine made from dried grapes, originating in the Valpolicella region, in the province of Verona. Among the grape varieties used to produce this Amarone della Valpolicella are Corvina Veronese, Corvinone, and Rondinella. The grapes grow on clayey, sometimes calcareous soils located in the heart of the Valpolicella Classico area, and are harvested between September and October, with a strictly manual selection. They are then left to dry on racks, where good ventilation must be ensured to avoid the formation of unwanted mold. Once the drying process is complete, it is vinified and subsequently aged in Slavonian oak barrels for a minimum of 18 months; finally, it is bottled and left to rest for a further 6-8 months.
