Champagne Grand Cru Blanc de Blancs Extra Brut, classic method, produced by Bruno Paillard, France, 2013 vintage. A Blanc de Blancs born from the founder's desire to create a champagne that is very different from others, very pure. 100% Chardonnay. Very fine perlage. The initial aromas are distinctly citrus—lime lemon and grapefruit—with hints of white flowers. With oxygenation, toasted almonds and bread crusts emerge. The initial aroma is lively and offers a complex sensation thanks to the citrus and white berry notes. The minerality of the chalk is noticeable. The finish is fresh, long, and persistent.
