Description
Chardonnay is the best known white grape variety in the world; in Trentino it was introduced at the end of the 19th century and has found such a favourable environment that it currently represents one third of the province's entire production potential. In addition to the production of important still wines, Chardonnay is the main base in the elaboration of Trentodoc. It has been recognised with DOC status since 1984.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.

Climate | The two areas enjoy the same sub-Mediterranean climate. The average annual temperature is around 12 degrees, while rainfall is around 700-800 mm, with two highs, in spring and autumn, and two lows, the most evident in summer and the other in winter. |
Soil composition | In the Santa Margherita area, the vineyards are located on ancient conoids with brown, shallow, skeleton-rich soils with a clay loam matrix. In the Valle dei Laghi, on the other hand, there are medium-deep soils of alluvial origin, rich in skeleton with a loamy-loamy matrix. |

Harvest | The grapes, harvested by hand when perfectly ripe, are taken to the cellar to be immediately crushed and destemmed. |
Wine making | The must and skins are cooled at a low temperature and remain in contact with each other for about five hours to allow the best extraction of aromas. Processing of the grapes continues with soft pressing of the pulp and skins to obtain the must, which is fermented, part in barriques and part in stainless steel. |
Aging | After ageing on the lees (30% in French oak barriques and 70% in stainless steel), the wine is cold bottled and allowed to refine in the bottle before release. |
