The vines used have a maximum age of fifteen years, as they are regularly renewed through periodic replanting. Careful selection of the plots allows the balanced profile of the wine to be maintained, enhancing in every glass the clear imprint of the Piedmontese territory.
How it is produced
Around mid-October, manual harvesting and selection of the bunches directly in the field takes place. The vinification involves a short maceration on the skins for about six to eight days at controlled temperatures, a technique aimed at extracting an intense colour while keeping the tannic structure in check. Once this phase is complete, the wine rests in steel tanks with regular racking. Finally, maturation is completed with a period in wooden barrels, which defines the final harmony before bottling.
