It was 2004 when the Baldi family bought a small farm in Staffolo, in one of the areas most suited to the cultivation of Verdicchio. Riccardo Baldi, the current owner, then started high school, after which he took the reins of the small company, until then followed by his father. Since 2010, the year of the first harvest, a lot of road has been traveled thanks to the precious advice of Lucio Canestrari, the owner of Fattoria Coroncino who has a long experience of Verdicchio and Staffolo.
The hectares of vineyards have become ten, with the acquisition of new plots also in Cupramontana and San Paolo on the south side of Vallesina. The central body is located in Contrada Castellaretta, on the typical predominantly clay and limestone soils, rich in calcium carbonate, located between 400 and 500 meters above sea level, which ensure strong temperature changes. Riccardo Baldi now takes care of every stage of the production with the collaboration of Umberto Trombelli in the cellar and Luca Severini in the vineyard. The management of the Staffolo vines is organic certified by the 2016 harvest and measures are being studied to reduce the use of copper as much as possible.
The old plant dates back to 1972 and is double Guyot, while the last, of 2010, is single. The production is evolving, so much so that this year begins a Reserve called Selva di Sotto with a selection of grapes from the highest vineyard in Staffolo, located in Selva Comperseto at 520 meters above sea level.
The double Guyot plant dates back to 1974 and the soils are less clayey and particularly rich in limestone and outcropping rock. Verdicchio obviously master of the vineyard and cellar with the two “classic” expressions, the La Staffa produced with grapes from all the vineyards of Staffolo and the Riserva Rincrocca result of a selection of the old vineyard. The range also includes a sparkling Verdicchio refermented on the lees with the ancestral method, not for tasting. The same fate also suffered the only red company, Rubinia, an IGT from Montepulciano grapes, from which the Rosato Igt Aurora is also born.
