From this winery
Eulogio Pomares has continued the family tradition of this historic Salnès winery since 2000, and cultivates 6.5 ha (predominantly Albariño and also some red varieties Caiño tinto, Loureiro tinto, Espadeiro). The patrimony of old vines (some a 100 years old and free-range), the location of the vineyards in the privileged area of Sisan and Padrenda, the mulching of the soils for the care of organic substance and the precision of Eulogio's winemaking make the wines of this bodega a reference in the Rias Baixas DO. The white wines with ageing capacity and the reds (a rarity), are the most expressive and complex in the area.

| Wine making | The grapes are destemmed and undergo a long, soft crushing, resulting in a low must yield. The must is fermented in a 2,200-litre foudre of 15-year-old French Vosges oak. Fermentation in foudre results in a low oak extraction but an oxidative rise that allows the wine to remain in contact with its lees without racking until after malolactic fermentation, which develops spontaneously. After the first racking, the wine remains in contact with the fine lees for a further three months until bottling. |
