Description

Vallone Graticciaia is a still red wine produced in Salento from 100% Negro Amaro grapes. The soil where these grapes are grown, on the Tenuta Flaminio estate, is calcareous and clayey. The Negro Amaro grapes are harvested from old saplings, approximately 70-80 years old, and dried naturally on racks thanks to the area's favorable mild climate, bathed in breezes from the nearby sea and abundant sunny days. This natural drying technique gives this wine its name: Graticciaia, in fact, is the name given to the mats where the grapes are placed during this process. The grapes are harvested by hand towards the middle or end of September, depending on the vintage, and left to dry on the Castel Serranova estate; The drying times vary depending on the weather conditions but do not exceed a month. After this period, in the middle of autumn, the winemaking process begins: first fermentation, then maturation in steel for about two years, and finally a year of aging in Allier and Nevers oak barrels. Vallone Graticciaia is one of the iconic IGT wines of Salento and is produced only in the best vintages, guaranteeing a quality product that, in fact, has been recognized over the years with several important awards from expert sommeliers: the 5 Grappoli di Bibenda, 3 Stelle Veronelli, 4 Viti Vitae AIS, and other important international recognitions.

The winemaking activity dates to the second half of the 19th century when Commander Vincenzo De Marco successfully started the production and marketing of bulk wines in France and Tuscany.

The company born from the union of the lands of Professor Donato Vallone with those given as a dowry by Commendatore De Marco to his daughter Maria: the marriage deed of 1934 establishes the merger of two estates, the Tenuta Flaminio of Brindisi with the Tenuta Iore of San Pancrazio Salentino. Later, at the end of the 1960s, the splendid Castel Serranova estate was added.

Harvest Careful selection of Negroamaro clusters from an old vine bred to the alberello system. The grapes are first brought to maturity, then left to dry on racks.
Wine making When the drying process is complete, the grapes move on to vinification. The physiological processes that take place in the berry and the fermentation of the must in late autumn, when the ambient temperature is lower, lead to a completely different evolution from traditional vinification. The temperature of the must is strictly regulated throughout the slow fermentation process and the first stage of ageing is carried out in small wooden barrels.
