What kind of wine it is
Chianti Classico Riserva by Vallepicciola is a red wine with Denomination of Controlled and Guaranteed Origin from Tuscany, an elegant and structured expression of Sangiovese fermented in concrete and aged in barrels. In the glass, it reveals a ruby red colour and a complex bouquet of violet, ripe fruit and black pepper, unveiling on the palate freshness, soft tannins and a rich taste of blackberry and sour cherry jam. Boasting good lingering aromas and remarkable ageing potential, it is the ideal companion to enhance the flavours of Florentine steak and long-aged cheeses.
Where it comes from
The grapes come from Pievasciata, in the municipality of Castelnuovo Berardenga, a highly prestigious area of Chianti Classico. The vineyards are situated at an altitude between 380 and 440 metres above sea level, an ideal condition for the aromatic definition of the wine. The soils are characterised by a composition of limestone and clay, enriched by the presence of galestro and alberese. This particular soil matrix helps to give the wine a solid structure and a clear flavour profile, reflecting the authenticity of the Tuscan landscape in which it is rooted.
How it is produced
The harvest takes place in vineyards cultivated with spurred cordon and Guyot training systems. In the winery, the alcoholic fermentation at controlled temperature takes place in concrete vats, followed by maceration on the skins for about fifteen days. The subsequent malolactic fermentation occurs in large French oak barrels. The maturation process continues with a prolonged ageing in barrels for about twenty-four months, using first and second passage wood to enrich the organoleptic complexity. The process concludes with a rest in bottle for six months, a period necessary to consolidate the wine's balance and harmony.
