Still white wine from Salento, Puglia, 12.5% ABV, produced by Tormaresca. 100% Fiano blend. 0.75 L bottle, 2023 vintage. A Fiano that expresses the soul of Salento, with the savory and acidity that make it a fresh and pleasant wine. The Fiano grapes for Roycello were harvested between September 7th and 18th. Vinification involves gentle destemming and soft pressing. The must is fermented with selected yeasts in stainless steel tanks temperature-controlled at 16°C. Aged sur lies in stainless steel for approximately 5 months and in bottle for approximately 3 months. On the nose, citrus notes of orange blossom and orange, fruity notes of yellow peach and pineapple, accompanied by delicate floral notes of jasmine and a light hint of hazelnut. Straw yellow in color with greenish reflections. Soft on the palate, followed by a pronounced savory flavor and a pleasant acidity.

| Harvest | The grapes were harvested when they had reached full aromatic ripeness. The Fiano grapes for Roycello were harvested between 7 and 18 September. |
| Wine making | The grapes were gently destemmed and immediately soft-pressed. The must was brought to a temperature of 10 °C for about 24 h to achieve natural decantation. The must thus clarified was fermented with selected yeasts in temperature-controlled stainless steel tanks at a temperature of 16 °C. |
