Pairings

Enjoy it with firm-fleshed fish (sea bass, St Pierre), cockle salad with coriander, pike-perch fillet and parsnip purée with grapefruit quarters. It also goes well with cheeses such as Valençay, Comté and goat's cheese. Bastingage can be enjoyed now and should keep you swaying for a good ten years.

In January 2008, Charlotte and Thomas embarked on their winegrowing adventure with the acquisition of the Clos de l'Élu estate, in the schist soils of Anjou Noir. With several years' experience as a wine consultant (Thomas) and in communications and management (Charlotte), they both passionately lead the life of this estate, which is built on the finest terroirs in the Layon valley.
