Percarlo by San Giusto a Rentennano is an organic red wine made exclusively from Sangiovese grapes. Recognised under the typical geographical indication of Tuscany, it displays a ruby colour and clear aromas of cherry, wild berries, violet and tobacco. On the palate, it is rich, with smooth tannins and a vibrant freshness that ensure a long and well-defined finish. Its dense structure enhances pairings with pasta dishes with ragù, roasts, game and mature cheeses. It is advisable to decant for one hour to fully appreciate its complex aromatic profile.
Where it comes from
This Sangiovese originates from the vineyards of the estate located near Monti in Chianti, Tuscany, at an average altitude of 270 metres. The vine roots grow in Pliocene soils, composed of sands and tuff pebbles with deep layers of clay beneath. Part of the soils consists of galestro and alberese, while in the Corsignano vineyard, clay marls predominate. The significant pedological variability of the site gives the grapes extraordinary concentration, outlining an authentic territorial expression that is reflected in the remarkable ageing potential of this Tuscan red.
How it is produced
Production begins with careful manual selection, bunch by bunch, in the best plots, where yields are very low and the fruit is harvested slightly overripe. Fermentation and maceration last for 30-35 days in enamelled cement vats, oak vats and steel containers. Ageing continues for 20-22 months in French oak barrels, which are essential for imparting elegance and defining the density of the wine. The wine then rests in the bottle for a further 15 months, thus consolidating its solid structure and innate suitability for ageing.
