Grappa alla Liquirizia by Poli is a 40% ABV flavoured grappa from Veneto, crafted through artisanal steam distillation of fresh grape pomace and natural infusion of liquorice root, showing a clear golden-yellow hue and a fragrant bouquet of spices and tea leaf. The palate reveals a resinous texture that balances intense liquorice with a gentle sweetness. Ending on a sweet-bitter finish, it is a refined after-dinner digestif when served neat at 12–20 °C in a tulip glass.
Where it comes from
This spirit unites two Italian regions, using fresh grape pomace from Veneto. By processing local varieties immediately, Poli captures the purest primary aromas. The defining character is added through Amarelli liquorice root from Calabria. This southern botanical imparts a signature flavour that integrates seamlessly with the northern spirit, creating a pure aromatic expression and a recognisable flavour profile.
How it is produced
Production uses a small-batch distillation method with discontinuous copper steam stills to extract aromas from the fresh pomace. The spirit then undergoes a natural infusion with liquorice roots to transfer its pigments and complex flavours. By avoiding wood maturation, Poli preserves the botanicals’ vibrant nature, ensuring an unaged spirit that focuses on its core ingredients without barrel interference.
