Description
It is made in the best vintages only from carefully selected grapes from the oldest and best exposed vineyards on the estate. It is made from 95 per cent Chardonnay grapes and 5 per cent reserve wine. The must is fermented partly in steel tanks and partly in oak barrels. The maturing on the lees lasts for over 30 months. This procedure produces a Franciacorta with a strong personality. To emphasise its biting character, it has been called Salvàdek: a Brescian dialect term meaning wild.
