Description
On the French-influenced island of Martinique, in the beautiful Caribbean Sea, J. Bally Rhum Ambre is produced, an amber rum produced by the J. Bally distillery. The latter began its activity in the 19th century by Jacques Bally and is still capable of producing excellent vintage rums of various types, using both traditional and innovative techniques. The island of Martinique, particularly the Carbet area where the distillery is located, is excellent for the production of Rhum Ambre because it is characterized by the cultivation of numerous sugar cane plantations, the main ingredient of rum. Rhum Ambre, so named for its wonderful amber hue, has the main characteristic of being agricultural. Agricultural rum is derived from the direct distillation of sugar cane, or more precisely the juice extracted from it, while industrial rum is made from the distillation of the molasses from the same plant. Agricultural rum is therefore more valuable, traditional, and appreciated. Each sugar cane harvest is different, which is why the plants must undergo specific individual treatments. After the sugar cane juice is distilled, the liquid undergoes a crucial aging phase, which lasts approximately 24 months and takes place in oak containers. This long aging in wood gives the finished product an intense, smooth flavor and inimitable nuances that make it highly prized by rum connoisseurs.

Starting from the assumption that sugar cane has different characteristics for each crop, in order to enhance it, it is necessary to pass through distinct distillations and refinements.
