How it is produced
Vinification is based on spontaneous fermentation carried out by indigenous yeasts, which is essential to preserve the genuine essence of the fruit. The subsequent long maceration on the skins extracts colour and body, defining the wine’s structured profile. This rigorous process ensures excellent longevity, with an estimated ageing potential of between ten and fifteen years. To fully appreciate its qualities, it is recommended to serve it between 16 and 18 degrees after about an hour of decanting.
