On the nose, initial notes of ripe raspberry, morello cherry and plum emerge, later enriched by hints of mocha, roasted coffee and coconut. On the palate, it is consistent and profound, with a rich sip supported by a powerful tannic structure. Its balance and lingering finish outline an ageing potential estimated between ten and fifteen years.
Where it comes from
This wine is produced at Podere Centine, located in Montalcino, in the heart of Tuscany. The Cupano estate, led by founders Ornella Tondini and Lionel Cousin, is situated on a south-facing hill, a privileged position that ensures optimal ripening of the grapes. Since 1996, the land has never been treated with synthetic chemicals, fertilisers or pesticides. The agronomic management follows the principles of strict organic viticulture integrated with biodynamic practices, with the aim of preserving the local ecosystem and allowing the terroir to express itself authentically.
How it is produced
In the cellar, Lionel Cousin works according to the principle of total respect for nature to preserve the original aromatic integrity. The vinification process enhances the distinctive features of Brunello di Montalcino, resulting in a limited and highly prized production. To fully appreciate its structure, it is advisable to decant for one hour before serving, at a temperature between 18 and 20 degrees Celsius. In terms of pairing, this red wine goes beautifully with dishes of intense flavour, making it ideal to accompany game, red meats, pork and mature cheeses.

Total respect for nature guides the meticulous work in the vineyard and cellar, resulting in an exclusive production of only 10,000 bottles per year, whose excellence is confirmed by the prestigious Decanter and Vinous scores.

Lionel and Ornella bought Centine in 1994. That land - located south-west of Montalcino, close to the medieval town of Camigliano - had been left uncoltivated for more than 40 years. The soil they found was extremely pure, never touched by chemicals, fertilizers, pesticides or any other form of industrial agriculture.
Thus, in 1997, Ornella and Lionel chose to plant 3.4 hectares of vineyard around the hill, facing south, certified organic since the beginning: 2.4 hectares of Sangiovese for Brunello and Rosso di Montalcino, 0.6 Cabernet Sauvignon and 0.4 Merlot. Carlo Ferrini helped us to select the land for the vines and the vine-stocks, the growth system and the height of the plants. François Bouchet initiated us to biodynamic, the simple and efficient biodynamic of the old gentleman farmer he was. In 2013 we planted three more hectares of vineyard: Sangiovese (2ha), Cabernet Franc, Cabernet Sauvignon, Merlot. Read more
