It all started over 40 years ago. Joseph Helfrich created the Les Grands Chais de France group with the desire to satisfy the thirst of wine lovers. Story The Saint-Véran appellation lies to the south of the Mâconnais region, at the crossroads of three gastronomic regions: Burgundy, Beaujolais and Bresse. This young AOP was created in 1971. Clos de Chevigne was founded in 1990, nestling at the foot of the Roche de Solutré in southern Burgundy in the commune of Prissé.
Soil composition Stony scree and Jurassic clay-limestone soils.
Fermentation temperature 16-20 °C
Wine making Traditional vinification: Direct pressing on receipt of the grapes in a pneumatic press, settling, cold storage for 48 hours. Fermentation in vats at a low temperature of 16-20 °C to preserve the aromas.
Aging Aged in barrel for 8 months.
