Harvest Hand-picked, very careful sorting.
Wine making Whole grapes vinified, no SO2 added. Inertisation with a little dry ice. Fermentation in cement vats, with minimal extraction (no pumping over). Early pressing (before the end of alcoholic fermentation), to favour the fruit and limit tannin extraction.
Aging 100% malolactic fermentation on the lees, followed by early bottling.
