What kind of wine it is
The Terrebianche Montefalco Rosso DOC (Controlled Designation of Origin) by Cesarini Sartori is a red wine from Umbria, a structured and balanced blend aged in wood and steel that combines Sangiovese, Merlot, Sagrantino, and Cabernet Sauvignon. To the eye, it presents a ruby red colour with violet highlights, revealing an intense olfactory profile of blackberry, sour cherry, and cherry, enriched by notes of black pepper and vanilla. On the palate, it is full and enveloping, supported by a pleasant freshness and savouriness. The tannic texture is smooth and well-integrated, leading to a long and persistent finish, with soft and pleasantly round nuances.
Where it comes from
The grapes are grown in the estate's vineyards located in Umbria, in the area dedicated to Montefalco Rosso. The vines are trained using the spurred cordon system on a unique clay, sandy, and lacustrine soil. This geological composition gives the wine a savoury character and a rigorous gustatory structure.
How it is produced
The process begins with a manual harvest and a strict selection of the bunches. After pre-fermentative cryo-maceration, alcoholic fermentation takes place in temperature-controlled steel tanks. The wine undergoes malolactic fermentation in wood, followed by a three-year ageing process. The resting period is divided between steel, six months in large oak casks, and a long stay in the bottle—essential steps to blend the aromatic profile and soften the strength of the tannins.

Their choice was not random: already in 1312 the urban land register certified the millennial viticultural vocation of the territory , accross the "road" (Signæ) of the ancient Flaminia, where – it is said – there was a host which served a "sweet an flavoured" wine to people travelling from Rome to North Europe.
The winery is surrounded by 30 hectares of vineyards – cultivated with Sagrantino, Sangiovese, Merlot and Cabernet vines – and by several medieval castles, still populated, which draw a unique landscape scenario.
If we were to tell Signæ with just three words we would choose technology, genius and sustainability. Thanks to technology we are able to minimize the use of chemicals both in the vineyards and in the cellar: the result are high quality natural wines, with a minimum quantity of sulphites which do not bother the head or the stomach. Alongside technology, it remains an important manual work: the harvest is manual, as the processing of the soil around the vines and the selection on vibrating tables, first of the bunches and then the berries.
