Rosso Rifermentato No Autoclave by Bergianti is a sparkling organic red wine with Protected Geographical Indication from Emilia-Romagna, boasting a fresh and straightforward character. It is crafted from a lively blend of Lambrusco Salamino and Lambrusco di Sorbara, grown biodynamically. As a bottle-refermented wine offered at zero dosage, it retains a dry flavour profile and a pleasantly easy drinkability. The absence of fining and filtration preserves the natural sediment, giving the glass an essential structure and a pronounced varietal aromatic expression. A brief decanting allows this natural refermented wine to express its full potential.
Where it comes from
The grapes are grown in Emilia-Romagna, within the Emilia area, a region historically renowned for producing lively and easy-drinking reds. The vineyards, trained using the Guyot system, have an average age of fifteen years and are situated at an altitude of twenty-three metres above sea level. The vine roots delve into medium-textured soils, characterised by a predominant sandy and silty component, a key factor in enhancing the fruit and structural lightness. Harvest takes place between mid and late September, ensuring measured yields and perfect ripeness for this authentic and vibrant Emilian blend.
How it is produced
The cellar process begins with careful destemming, followed by a four-day skin maceration to delicately extract colour and aromas. After racking with gentle pressing, the must undergoes a spontaneous fermentation triggered exclusively by indigenous yeasts. The maturation phase is divided into two stages: the wine initially rests for six months in cement tanks, a material that ensures thermal stability, and continues ageing for a further twelve months. The sparkling character is achieved through bottle refermentation, carried out artisanally by adding sweet must from the same harvest, thus creating an unfiltered and intact flavour profile.
