Bava's Ruché di Castagnole Monferrato is a dry Piedmontese red wine with a controlled and guaranteed designation of origin (DOCG) and a clean profile, produced from the indigenous Ruché grape variety. On the nose, it reveals scents of rose and violet, combined with hints of white pepper and small forest fruits. On the palate, it is harmonious, with notes of cherry and blueberry accompanied by light, sweet tannins. The absence of wood ageing preserves varietal precision, offering a fresh and direct drinkability, ideal for pairing with white meats and fresh cheeses.
Origin
The grapes come from an area of the Piedmontese Monferrato limited to only seven municipalities, historically suited to this variety. The vineyards grow at an altitude of two hundred metres, cultivated using the Guyot system on soils with a distinctly calcareous nature. This particular geological composition gives the wine a balanced structure and a clear aromatic definition. The agricultural history of this hilly territory is linked to the dedication of Don Cauda, a pioneer in the enhancement of the Ruché grape variety.
Production
Production begins with a rigorous manual harvest, followed by a short maceration to extract colour while keeping the delicacy of the tannins intact. Fermentation is completed without pomace, an essential technical step to preserve the primary aromas of the grape. Bava avoids the use of barrels to protect the immediate fragrance of the fruit. With the arrival of spring, the final rest begins, an ageing process aimed at mellowing the wine and allowing the bouquet to evolve harmoniously.

More than 115 years and six generations have passed since that first harvest. Over time, the finest Bava Barberas have earned recognition in many countries thanks to the consistently high quality of the estate’s production.
