Aging 12 years of hibernation in the cellar. Hibernation: a state of hypothermia that lasts several years and allows the wine to conserve its energy during the ageing period. Renaissance during the hibernation period with an expedition liqueur at 5 grams per litre. Renaissance: an operation that consists of removing the deposit that stirring has concentrated in the neck of the bottle. This crucial operation brings a small amount of oxygen that enlivens the wine. The liqueur d'exépidition is a secret formula of this mixture, handed down from generation to generation, which brings the final touch that sublimates the vintage.

The Clouet family is a one of winemakers whose origins, as they say, "get lost in the mists of time." Its founder was a printer in the Versailles court of Louis XV and for several generations, their descendants continued this work. The peculiar style "Ancien Régime" on their labels is a tribute to the founder of the house.

It took more than two centuries and several generations of Clouet to get plots of vines in the terroir of Bouzy, which remain in the hands of the family of its founder. Bouzy is situated in the Southern part of the Mountain of Reims. The 9 hectares are classified as 100% Grand Cru. Only 17 of the 300 existing villages benefit from the status of Grand Cru, Bouzy being one of them. Lovingly tended vines ripen perfectly Bouzy pinot noir, one of the world's most complex strains. There is 8,000 feet per acre and soils are cool with calcareous clay.
