What kind of wine it is
Cason Bianco delle Dolomiti by Alois Lageder is a still white wine from Alto Adige, the result of a blend of Viognier and Petit Manseng. In the glass, it displays a bright golden yellow colour, introducing an intense bouquet where candied citrus fruits, ripe fruit, vanilla and exotic spices stand out, enhanced by toasted notes. On the palate, it reveals a vigorous and layered structure, characterised by pronounced savouriness and vibrant freshness. Its aromatic complexity and persistent finish make it ideal for pairing with seafood risottos, shellfish, white meats and soft cheeses.
Where it comes from
This wine originates in the Bassa Atesina, in Alto Adige, from the vineyards of the Casòn Hirschprunn estate in Magrè. The vines, aged between twenty and sixty years, are cultivated at altitudes between 230 and 360 metres, strictly following the principles of organic and biodynamic agriculture. The roots delve into a sandy and stony terroir, with a strong dolomitic limestone matrix and clay inclusions. This specific soil composition, combined with low yields, enhances the site's typicality, giving the wine a distinctive saline identity and a precise gustatory definition.
How it is produced
Vinification begins with a spontaneous fermentation with indigenous yeasts in barrels of various sizes. The wine matures for a long time, remaining in contact with the fine lees for about eleven months in barrels, then continues its evolution in other wooden containers. The blending of the individual components usually takes place a year and a half after the harvest, promoting a deep integration of aromas. A one-year bottle ageing precedes its release on the market, resulting in a carefully balanced harmony between softness and mineral drive.
