Pierre Ponnelle was the first grape selector and merchant in Burgundy (Négociant) and he uses only Pinot Noir and Chardonnay grapes for his sparkling wines. Bourgogne, thanks to the so called "affectation parcellaire", is the only area where the various producers must choose which vineyards are to be used for the production of Crémant, and declare it before March 31st of each year.
The ageing cellars of the company are located in the basement of the Cathedral of Notre Dame de Beaune, once the oenological heritage of the Cistercian monks, now owned by the Maison.
