In 1531, a few kilometres away from Limoux, the monks of the Benedictine Saint-Hilaire Abbey discovered that the white wine they had bottled and corked formed bubbles : the blanquette de Limoux was born. It is now considered one of the oldest sparkling wines in the world.
From the 17th century, the blanquette de Limoux’s reputation spread outside of the region and it was used as a quality product and gift to Lords, military authorities and to ecclesiastic personalities.
Taken from 5 centuries of tradition, the typical pronounced taste of the blanquette de Limoux is due to the grape variety Mauzac. The name “Blanquette de Limoux” comes from the grape variety called Blanquette in the Limoux language, a name given because of the clear colour underneath the Mauzac leaves.
