Harvest | Late September for Cannonau and early October for the Cabernet Sauvignon, when the grapes are overripe. |
Wine making | After crushing, cold maceration for three days occurs before the fermentation at a temperature of 22-24°C. Only in the final stage are the two different varieties blended to contemplate the transformation process into wine and achieve the necessary compositional harmony. |
Aging | 3 years, starting in barrels and then in oak barrels of medium capacity at 15°C and at least 6 months in the bottle. |
