Wine making | Soft pressing of the loose berries is carried out in the first fortnight of January. Fermentation: Destemming followed by soft crushing of the grapes. The fermentation lasts 22/24 days with daily pump-overs. |
Aging | 5 months in stainless steel, then in wood for 15 months (half in Slavonian oak casks, half in second-passage barriques). The wine finally ages 6 months in the bottle. |
