In the Canary Islands the wine has been produced for centuries: at least since the fifteenth century, when the Spaniards occupied these islands by importing the vine and its cultivation.

The Canary Islands are characterized by a peculiar environment. The soil of volcanic origin is melted and sandy, with an excellent permeability and a great wealth in minerals, favorable characteristics for producing high quality wines.
The area is beaten by the hot wind of the trade winds and enjoys a mild climate all year round, with reduced rainfall.
In this environment the cultivation of the vine is done by digging holes where the plants are planted. The shoots are not tied to supports but are left free to crawl on the ground to withstand the strong wind. The vines are not grafted because the Canary Islands are free from Fillossera.

Today in the Canary Islands there are 33 different varieties of grapes , many of which are native. At one time the most common wines were the passito wines such as Malvasia, while today the production is aimed at lighter wines, especially whites but also reds and rosés .
Among the finest white wines we find the Marmajuelo, produced by the homonymous vine, characterized by freshness and tropical aroma.
Quality is also the Vijariego produced in Tenerife, a white wine with a fruity and not very aromatic flavor, Gual and Verdello. Among the most widespread vines for the production of white wines there are also Listan Bianco, Malvasia and Albillo Criollo.
The red wines are obtained from the Listan Negro, Negramoll and Tintilla grapes, from which they produce fruity and velvety wines.
Among the wines produced in the Canary Islands we find ten DOC, the oldest of which is that of Tacoronte-Acentejo in Tenerife.

Climate and soil
The islands enjoy a very mild climate throughout the year which can however be, thanks to the influence of the trade winds, alternately very dry or rather humid. Being the Canary Islands in full Atlantic Ocean and in any case not too close to the equator the water temperature reaches 18 ° C in the months of January-February (colder period of the year), and then increase up to 28 ° C in the months of July-August-September (warmest period of the year). The rainfall regime is of the desert type, as only in some higher points the annual 200 mm is exceeded, concentrated exclusively in the winter season.
History
Visited by the Phoenicians in the 4th century a.C., it was new only in the 13th and 14th centuries. They were rediscovered, on the occasion of an expedition organized by Alfonso IV of Portugal, by Lancellotto Malocello in 1336 and by the French in 1402. Afterwards, disputed between Portoghesi and Castigliani, the archipelago was recognized as Spanish dominion. From the 16th century they began to decline economically, until in 1852 their ports were declared free ports. The archipelago of the Canary Islands, already an autonomous region of Spain, obtained in 1983 the status of an autonomous community envisaged by the Constitution; in the following years it considerably increased its autonomy, especially with regard to education and health.
Typical dishes
The gastronomy of the Canary Islands is particularly interesting above all because the archipelago is a meeting point for many cultures: its cuisine is very much influenced by both the European, the tropical and the African tradition! Most of the typical dishes are made up of the combination of local flavors and those coming from the continent. The ingredients of this kitchen are very simple and all of excellent quality because they originate from the unspoiled nature of the islands. The climate then makes the archipelago very fertile, guaranteeing the cultivation of numerous plantations throughout the year. The basic foods of Canarian gastronomy are: Gofio, Mojo and Papas arrugadas.
