Vouette et Sorbée Champagne Blanc d'Argile Brut Nature
The surprise. A pure chardonnay, vine from 4 to 8 years, vinification with prolonged breeding in oak barrels (as for all the wines of the domain), not dosed. Some people think of a Chablis wine with bubbles ... Yields up to 30 hl / ha. The first vintage was 2004 and, given the success of this bottle, I try to match it. Again it is the type of clay that makes us choose these plants (thank you Claude). The minerality is exacerbated by the particular climate of the vine of Bas des Biaunes (maturity, ecosystem) fresh and varied ecology.

Perlage

Fine and persistent perlage.

Colour

Brilliant straw yellow.

Bouquet

Notes of white flowers and citrus nuances, with a meringue finish.

Flavour

Great minerality and freshness, with beautiful harmony, elegance and persistence.

Pairing

Ideal for fish dishes, cheeses.
