Harvest October. Grapes are hand-harvested when perfectly ripe.
Vinification The bunches are quickly carried to the wine factory where grapes are destemmed and left to ferment and macerate for 20 days.
Ageing After drawing-off, the wine is aged in 225 litres French oak casks for 20-24 months, then blended in steel tanks and subsequently left in the bottle for 10 months.
