Soil composition |
Vineyards are located on volcanic soils, which are very dark and deep in the villages of Fittà and Tremenalto, whereas in the village of Castellaro they are richer in basaltic stones. Vineyards are very steep, some of them with a 40% slope. |
Harvest |
By hand, the end of September. |
Vinification |
Grapes are destemmed and then softly pressed. The alcoholic fermentation occurs in steel vats, whereas the malolactic fermentation is carried out for part of the wine. |
Ageing |
In stainless steel in contact with fine lees for 5 months. Only membrane filtration is carried out before bottling. |
Pairing |
Ideal as an aperitif, it accompanies appetisers and first courses based on vegetables and fish. It is also excellent with fish-based main courses, white meats, and fresh and short-aged cheeses. |
