||The perfectly healthy bunches are exposed on gratings under the northerly shed where the typical Bora wind blows. Prior to Christmas the grapes are pressed by giving a thick dough that is fermented in French oak barriques (50% new, 50% according to passage).
||It accompanies paté de fois gras and fermented cheeses but is also indicated for meditation only.
