Soil composition Deep, sedimentary, with sandy clay and limestone.
Cultivation system Bilateral spurred cordon.
Harvest 28th and 29th of September.
Vinification Small lot fermentation at 25-30°C, using indigenous (wild) yeast in small concrete vats. Twelve-day maceration with frequent aerations, pump-overs and punch-downs of the cap for optimum polyphenol extraction.
Ageing In new French and American 225-liters oak barrels.
