Soil composition	Various types of soil: limestone and marl on the Côtes de Nuits, Beaune and Côte Chalonnaise and granite in the south of Burgundy.
Vinification	Traditional method. The grapes are pressed as soon as they arrive in the vat room in pneumatic presses and then placed. Alcoholic fermentation takes place in temperature-controlled stainless steel vats at 18 °C. The base wines are then blended. They then undergo a second fermentation in the bottle and a 15-month maturation ("Sur Latte") before being put into gyro-palettes and disgorged.
