||15% Cabernet Sauvignon, 82% Tempranillo, 3% Graciano
||Clayey-ferrous soil with a large presence of pebbles on the surface.
||The grapes are harvested by hand in small pallets to ensure that they reach the winery quickly and in perfect condition. Graciano on October 7th, Tempranillo on October 9th and Cabernet Sauvignon on October 15th.
||Fermentation of each variety separately at controlled temperature for 11 days. The Tempranillo ferments in small stainless steel tanks and the Graciano and Cabernet Sauvignon in a small oak vat. We practice pumping over and delestage.
||23 months in new French Allier oak barrels.
