Vinification |
Destemming of the grapes, a selection of the crushed grapes undergoes cryomaceration. A soft pressing of the remainder and the must is fermented in temperature-controlled stainless steel containers at 17-18°C. |
Ageing |
After racking, alcoholic fermentation is completed, and the wine remains on the lees with bâtonnage for six months. Bottling and storing the bottles in conditioned rooms for a few weeks before being marketed. |
Pairing |
Capable of masterfully accompanying all fish, it does not disdain white meats, cured meats and both fresh and medium-aged cheeses. |
