A pure Syrah, it comes from the heart of our estate, on that bush-trained vineyard where the stone component becomes preponderant. The expressiveness of the vine is phenomenal: plums, blueberries, spices, liquorice, smoky tones, leather. It lingers mysteriously and gives a pyrotechnic finish.

Bright ruby red.

Bouquet

Impressive olfactory impact of black berries, eucalyptus, cloves and sweet pepper.

Flavour

Palate with round inlet, great flavour and very fine tannins, with balsamic shades. Persistence is long.

Pairing

Pappardelle hare ragout, juniper boar steak, chamois meat, venison in sauce, gulasch, roast lamb.

Harvest	Ended by the middle of September. The grapes are selected in the vineyard and collected manually in small boxes. They are gently de-stemmed to obtain whole berries and further selected by hand on the sorting table.
Vinification	Fermentation and maceration in French oak barrique and tonneaux.
Ageing	15-18 months in new French oak barrique and tonneaux.
