The history of this wine is linked to the lively wine-growing reality of the Langa in the late 19th century. Its protagonists are Dr Cappellano of Serralunga and Dr Zabaldano of Monforte, who were able to apply, according to their formula, the much-vaunted properties of China Calissaia to Barolo, creating an elixir with immediate commercial fame and lasting fortunes within the region's peasant culture. After gaining a particular market interest, Barolo Chinato met with indifference in the decades following the Second World War, precisely in correspondence with the crisis of peasant cultural models. Ceretto realised its importance and was among the protagonists of its revival in the late 1980s. The company's formula involves using a Barolo D.O.C.G. to which are added herbs, a dozen rigorously selected, and China Calissaia infused, separately, in alcohol. The result of tasting is a continuous succession of flavours that ends with a pleasantly bitter note perfectly balanced by the sugar. Barolo Chinato can be considered an excellent end-of-meal wine and is a perfect pairing with chocolate desserts.
