Description

Vecchie Terre di Montefili Anfiteatro is the flagship wine of the winery founded by Roccaldo Acuti in 1979 and continued by his daughter Maria and son-in-law, winemaker Tommaso Paglione. The Sangiovese grape variety used to produce this wine is native to Tuscany and vinified as a single varietal. It is grown in Greve in Chianti, in the province of Florence, on typically clayey soil where it performs best, at an altitude of 500 meters above sea level. Sangiovese is a grape variety with medium-large, purplish-black berries that tend to ripen late and are characterized by a high level of acidity. This grape variety is particularly susceptible to mold, a condition that generally occurs during cold, humid winters or particularly rainy autumns. Furthermore, it tends to produce abundant harvests, a factor that forces many winemakers to monitor yields to prevent a decline in the quality and properties of the wine. After the manual grape harvest and the subsequent destemming phase, aimed at separating the berries from the stalks, the actual vinification process begins with spontaneous fermentation thanks to the use of exclusively native yeasts and subsequent maceration in stainless steel barrels. The process concludes with aging, which lasts two years, in 350-liter barrels.
