A Sweet and Savoury Profile
The flavour profile offers a sophisticated balance of sweet and savoury, combining caramel chocolate (making up 29% of the dough) with a 5% addition of salted caramel. Madagascar vanilla adds a warm aromatic depth, while orange paste provides a fresh citrus lift that beautifully balances the richness. Each bite transitions from smooth caramel notes into a lingering finish where sweetness and a savoury edge meet in harmonious contrast.
Glaze, Texture, and Storage
A rich caramel glaze crowns the panettone, finished with crunchy chopped nuts to create a distinct textural contrast between the crisp exterior and the tender crumb. This interplay highlights the airy interior and layered caramel notes, making every slice deeply satisfying.
